INGREDIENTS:

- olive oil - onion - celery - gnocchi - chicken broth - chicken breasts

Heat oil over medium heat in a large pot. Cook onion, celery, and garlic until starting to soften but not too browned, stirring occasionally.

Add broth and milk. Cover and bring to a boil over high heat.

Once the soup is boiling, add gnocchi, chicken, carrots, and thyme.

Remove soup from heat and stir in spinach, salt, and pepper. Serve immediately, garnished with a few extra thyme leaves or sprigs, if desired.
